Whiskey
The term whiskey (alternatively whisky) refers to an alcoholic beverage made by distilling beer, made from grain.
Beer and wine rely on single celled organisms, called yeast, to ferment sugars in food products. When yeast is allowed to ferment grain, the alcoholic beverage that results is called beer. When the yeast ferment fruit]]s the resulting beverage is usually referred to as wine. Fermented honey results in mead.
Yeast's fermentation of those sugars Is a kind of digestion, that does not extract all the energy from the food, but has the beneficial side-effect of killing other harmful micro-organisms, so there are periods in human history when people drank beer, instead of water, because the only water they had access to was polluted, and would infect them with diseases, including fatal diseases like cholera.
When making beer or wine the alcohol content of the beverage will eventually rise to a level high enough the yeast cannot function any longer.
The process of distillation can then be employed to boost the alcohol content. Distillation exploits the fact that different liquids have different boiling points. The stills used in distillation are sealed vessels, filled with beer or wine, that is slowly heated. As the temperature inside the still rises to boiling points of the components within the beer or wine it boils off. When it rises to the boiling point of ethyl alcohol the vapor is captured, and cooled, to be made into whiskey.
Fermentation produces small amounts of other toxic by-products, including methanol, acetone, benzene, formaldehyde, ethyl acetate, propanol and butanol.[1][2] While it is possible for modern distillers to completely remove all the other intoxicating elements from whisky, as is done with vodka, they allow some of the other toxic elements to remain, because they are essential for whiskey to have its distinctive taste.
The raw spirit that comes directly from a whiskey still, colloquially called "moonshine", is a colorless beverage that contains toxic by-products, that have not been buffered or transformed during the aging process.
Whiskey, like brandy, is aged in wooden barrels, that have had their inner surfaces scorched, and turned to charcoal.[1][2] The pure Carbon in the barrels absorbs some of the most toxic by-products. Other by-products are chemically transformed into less toxic chamicals that give aged whiskeys their distinctive flavors.

The primary fusel alcohols, amyl (60–70 per cent of fusel oils), butanol, and propanol, are insolvent in water, carrying two extra carbon molecules. Colourless fusel oils have a fetid, offensive smell, and an acrid taste. Small doses make whisky unpalatable and injurious to drinkers’ health.

Fusel oils are heavier alcohols such as propanol and butanol, which are known for contributing harsh, unpleasant flavors and aromas. The taste and smell are often compared to paint thinner or strong chemical cleaner. Although fusel oils tend to appear more prominently in the “tails” portion of the distillate, they can also be found in the heads. In excess, fusel oils can make the whiskey taste rough and unrefined.
